What You Need
Original recipe yields 8 servings
2 cans (15 oz. each) chickpeas (garbanzo beans), rinsed, divided
1/2 cup each finely chopped English cucumbers and tomatoes
1/4 cup finely chopped red onions
1/4 cup ATHENOS Traditional Crumbled Feta Cheese
1/4 cup KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise
2 Tbsp. each fresh lemon juice and finely chopped fresh parsley
4 whole wheat pita bread pockets, cut in half
8 pieces leaf lettuce

Let's Make It
Mash 2 cups chickpeas lightly in medium bowl. (Do not mash until smooth.)
Add cucumbers, tomatoes, onions and remaining chickpeas; mix lightly. Stir in cheese, mayo, lemon juice and parsley.
Refrigerate 30 min.
Fill pita pockets with lettuce and chickpea salad just before serving.
