What You Need
Original recipe yields 8 servings
2 lb. baking potatoes (about 6), cut into 1-inch pieces
2 yellow onions, cut lengthwise in half, then crosswise into thin slices
2 Tbsp. flour
1 cup fat-free reduced-sodium chicken broth
8 boneless skinless chicken thighs (1-1/2 lb.)
2 Tbsp. ranch salad dressing mix
6 oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
3 green onions, sliced

Place potatoes and yellow onions in slow cooker sprayed with cooking spray. Sprinkle with flour; mix lightly. Add chicken broth; top with chicken. Sprinkle with salad dressing mix. Cover with lid.
Cook on LOW 6 to 7 hours (or on HIGH 3 to 4 hours).
Use slotted spoon to transfer chicken to plate. Transfer potatoes and yellow onions to platter; top with chicken. Cover to keep warm.
Add cream cheese to liquid remaining in slow cooker; cook on HIGH 3 to 4 min. or until cream cheese is completely melted and sauce is well blended, stirring constantly with whisk.
Spoon sauce over chicken and vegetables; sprinkle with green onions.
This recipe can easily be cut in half to make just 4 servings.
