What You Need
Original recipe yields 12 servings
1/3 cup sugar, divided
1-1/4 cups flour
1/2 cup creamy wheat (enriched farina) hot cereal (1-minute, 2-1/2-minute or 10-minute cook time), uncooked
1 Tbsp. CALUMET Baking Powder
2 tsp. ground cinnamon
1/2 tsp. salt
1/2 cup apple juice, divided
1/2 cup milk
1 egg, lightly beaten
2 Tbsp. margarine or butter, melted
1 small apple, peeled, chopped (about 1 cup)

Let's Make It
Preheat oven to 400°F. Remove 1 Tbsp. of the sugar; set aside for later use. Mix remaining sugar, the flour, cereal, baking powder, cinnamon and salt in large bowl until well blended; set aside. Remove 2 Tbsp. of the apple juice for later use. Beat remaining juice, the milk, egg and margarine with wire whisk until well blended. Add to dry ingredients; stir just until moistened. Gently stir in apples.
Spoon evenly into 12 greased medium muffin cups.
Bake 18 to 20 min. or until toothpick inserted in centers comes out clean. Remove from pan; brush tops with the reserved juice. Sprinkle with the reserved sugar. Serve warm.
To freeze muffins, place cooled muffins in a resealable freezer-weight plastic bag; seal bag. Freeze up to 6 months. Thaw overnight at room temperature. To reheat, place muffins on microwaveable plate and microwave just until warmed.
Prepare as directed, using fat-free milk.
