Original recipe yields 12 servings
3/4 cup unsweetened applesauce
3/4 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
3 oz. BAKER'S Unsweetened Chocolate, melted
1 egg white
1 tsp. vanilla
1 cup tightly packed baby spinach leaves
1 cup flour
1/2 cup sugar
1 tsp. each CALUMET Baking Powder and baking soda
1/2 tsp. salt
2 Tbsp. miniature semi-sweet chocolate chips

Heat oven to 350°F.

Blend applesauce, sour cream, melted chocolate, egg white, vanilla and spinach in blender until smooth.

Combine dry ingredients in medium bowl. Add applesauce mixture; stir just until dry ingredients are moistened. (A few lumps can remain.)

Spoon into 12 muffin pan cups sprayed with cooking spray. Sprinkle with chocolate chips.

Bake 18 to 20 min. or until toothpick inserted in centers comes out clean. Cool 10 min. Remove muffins from pan to wire rack; cool completely.
