Enjoy a twist on a Thai favorite with Chicken Pad Thai with Sweet Potato 'Noodles'. These sweet potato 'noodles' are a tasty alternative to the ordinary.
What You Need
Original recipe yields 4 servings
1/2 cup plus 2 Tbsp. PLANTERS Dry Roasted Peanuts, divided
3 Tbsp. KRAFT Zesty Lime Vinaigrette Dressing
3 Tbsp. KRAFT Lite Asian Toasted Sesame Dressing
3/4 cup unsweetened coconut milk beverage
1 tsp. Sriracha sauce (hot chili sauce)
1 lb. sweet potatoes (about 2), peeled
1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
2 cups chopped fresh broccoli
1/3 cup water
2 Tbsp. chopped fresh cilantro

Use pulsing action of food processor to process 1/2 cup nuts 1 min. or until finely ground. Add dressings, coconut milk and Sriracha sauce; process 1 min. or until well blended. Reserve for later use.
Cut potatoes into thin curled strips using medium-size blade of vegetable spiralizer.
Cook chicken in large nonstick skillet on medium heat 8 to 10 min. or until done, stirring occasionally. Remove chicken from skillet.
Add potatoes to skillet along with the broccoli and water; stir. Cook 3 to 5 min. or until potatoes are tender, stirring frequently. Add dressing mixture and chicken; mix lightly. Cook and stir 1 to 2 min. or until heated through. Remove from heat.
Sprinkle with cilantro and remaining nuts.
If you don't have a spiralizer, you can instead use a vegetable peeler to make the sweet potato "noodles." Starting at the top of the peeled sweet potato, pull the vegetable peeler down the potato into lengthwise strips.
