What You Need
Original recipe yields 12 servings
2 env. (1/4 oz. each) KNOX Unflavored Gelatine, divided
3/4 cup water, divided
32 vanilla wafers, finely crushed
3 Tbsp. butter, melted
3/4 cup plus 2 Tbsp. sugar, divided
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 Tbsp. vanilla
2 cups carbonated lemon-lime soda, divided
1/2 cup each fresh blueberries and raspberries

Let's Make It
Sprinkle 1 env. gelatine over 1/4 cup water in medium bowl; let stand 5 min. or until softened. Meanwhile, combine wafer crumbs, butter and 2 Tbsp. sugar; spoon into 12 (4-oz.) jars with lids. Press crumb mixture firmly onto bottoms of jars.
Bring remaining water and 1/2 cup of the remaining sugar to boil in saucepan. Pour over softened gelatine; stir until completely dissolved.
Beat cream cheese and vanilla in medium bowl with mixer until blended. Gradually add dissolved gelatine mixture, mixing well after each addition. Spoon evenly over crusts.
Refrigerate 15 min. Meanwhile, sprinkle remaining gelatine over 1/4 cup lemon-lime soda in separate medium bowl; let stand 5 min.or until softened. Bring 1 cup of the remaining lemon-lime soda and remaining sugar to boil in saucepan. Pour over softened gelatine; stir until completely dissolved. Stir in remaining soda; cool slightly.
Pour lemon-lime soda mixture over cheesecake layers in jars. Refrigerate 1-1/2 hours or until firm.
Spoon berries evenly over desserts, gently pressing berries into tops of desserts with back of spoon to secure. Cover jars with lids. Refrigerate 1 hour or until firm.
Prepare using ginger ale. Or if serving adults, prepare using ginger beer.
