Add Alfredo sauce to your favorite spiralized squash in this butternut squash spaghetti dish. This Butternut Squash Spaghetti Alfredo features the great flavor of sage, and you won't even miss the traditional spaghetti.
What You Need
Original recipe yields 2 servings
1 butternut squash (2 lb.)
1/4 cup water
2 Tbsp. extra virgin olive oil
1 Tbsp. chopped fresh sage
1/8 tsp. ground black pepper
1/2 cup CLASSICO Light Creamy Alfredo Pasta Sauce
1/2 cup KRAFT Shredded Parmesan Cheese

Let's Make It
Cut squash crosswise in half where the neck and bulb sections meet. Refrigerate bulb section for another use. Cut thin slice off top of squash; discard trimmed piece. Peel remaining squash piece, then cut lengthwise in half.
Use medium blade of vegetable spiralizer to cut squash into thin curled strips; place in large saucepan. Add water, oil, sage and pepper; mix lightly. Bring to boil on medium-high heat; cook 8 to 10 min. or until squash is cooked to desired doneness, stirring occasionally.
Stir in pasta sauce; cook on medium-low heat 3 to 5 min. or until heated through, stirring gently. Add cheese; mix lightly.
If you don't have a vegetable spiralizer, you can instead use a vegetable peeler to cut the butternut squash into noodles. Starting at the top of the peeled squash, pull the vegetable peeler down the squash into lengthwise strips
Prepare using 1 pkg. (12 oz.) frozen spiralized butternut squash or 4 cups refrigerated butternut squash spiral noodles.
How to Use the Remaining Squash Piece
Wrap remaining squash piece tightly, then refrigerate up to 24 hours. When ready to use, heat oven to 400°F. Cut squash into 3/4-inch cubes; spread onto foil-covered rimmed baking sheet sprayed with cooking spray. Drizzle evenly with 1 Tbsp. olive oil. Roast 35 to 40 min. or until squash is tender. Serve as a side with your favorite cooked lean meat.
