Remove and discard lobster shells. Coarsely chop lobster meat; place in medium bowl. Add celery and lemon juice; mix lightly.
Use serrated knife to make lengthwise cut into top of each bun, being careful to not cut through to bottom of bun.
Fill buns with lettuce and lobster mixture.
The lobster mixture can be prepared ahead of time. Refrigerate up to 24 hours before using as directed.
Add 1 Tbsp. capers to lobster mixture before spooning into buns as directed.
