1 seedless watermelon half (3 lb.)
2 Tbsp. sugar
Zest and juice from 1 lime, divided
1/2 cup ATHENOS Traditional Crumbled Feta Cheese

Heat greased grill to high heat.

Trim and discard ends from watermelon piece. Cut trimmed watermelon into 1-inch-thick wedges with rind left on end of each wedge.

Sprinkle both sides of wedges evenly with sugar.

Grill 1-1/2 to 2 min. or until bottoms of wedges are grill marked; turn. Repeat to grill mark other sides. Transfer to platter.

Drizzle with lime juice; top with cheese and lime zest.

Sprinkle with thinly sliced fresh mint before serving.
Variation
Cut off and discard both ends from 1 small 3-lb. whole watermelon. Stand watermelon on one cut end, then cut watermelon lengthwise in half. Place each half, large cut side down, on cutting board; cut each half crosswise into 1-inch-thick slices. Cut any large pieces into smaller pieces, leaving rind on one end of each piece. Sprinkle with sugar, then grill as directed.
Use Your Stove
Instead of grilling the watermelon wedges on your outdoor grill, you can grill them indoors using your grill pan on top of the stove. Heat grill pan on high heat. Sprinkle watermelon wedges with sugar, then add to grill pan and grill as directed.
