Avocado Egg Rolls

Please all the guests at the party when you serve these delicious Avocado Egg Rolls. In addition to creamy avocado, these Avocado Egg Rolls are filled with black beans, corn and shredded cheese for terrific flavor.

Original recipe yields 9 servings
1 can (15 oz.) no-salt-added black beans, rinsed
1-1/2 cups frozen corn
1 cup KRAFT Mexican Style Finely Shredded Four Cheese
1/3 cup TACO BELL® Mild Sauce
1 egg
18 egg roll wrappers
1 avocado, cut lengthwise into 1/4-inch-thick slices
3 cups oil
1/2 cup TACO BELL® Baja Sauce

Combine first 4 ingredients; set aside. Whisk egg in small bowl until blended.

Place 1 egg roll wrapper on work surface; brush evenly with some of the egg. Cover with second wrapper; brush all edges of top wrapper with some of the remaining egg. Spoon 1/3 cup bean mixture onto center of wrapper; top with 1 or 2 avocado slices. Fold 1 bottom point of wrapper over bean mixture, then pull to tighten. Fold opposite points of egg roll wrappers over filling, then roll up to completely enclose filling; press edges together to seal. Repeat to make 8 additional egg rolls.

Heat oil in medium saucepan to 375°F. Add 2 egg rolls; cook 3 to 5 min. or until crisp and golden brown, turning occasionally. Drain on paper towels. Repeat with remaining egg rolls.

Serve with Baja Sauce.

To keep the cooked egg rolls warm while frying the remaining egg rolls, place cooked egg rolls in single layer on baking sheet in a 200°F oven until ready to serve.
How to Peel and Slice the Avocado
Insert knife into tip end of whole avocado until knife reaches pit. Rotate knife around pit until avocado is cut lengthwise in half. Gently pull avocado apart by twisting the two halves in opposite directions. Place the half with the pit on a cutting board. Use knife to strike carefully but firmly into the center of the pit; twist to remove. Cut the flesh of each avocado half into slices, without piercing the skin.
