What You Need
Original recipe yields 4 servings
2 bananas, divided
1/2 cup BREAKSTONE'S or KNUDSEN Cottage Cheese
2 Tbsp. honey
1-1/2 cups old-fashioned or quick-cooking oats
2 tsp. CALUMET Baking Powder

Let's Make It
Reserve 1 banana for later use. Blend remaining banana with all remaining ingredients in blender until smooth.
Ladle batter onto hot griddle or into hot skillet sprayed with cooking spray, using 1/4 cup batter for each pancake. Spread batter to make 4-inch pancakes; cook until bottoms are golden brown, then turn to brown other sides.
Slice reserved banana. Serve over the pancakes.
Substitute maple-flavored or pancake syrup, sugar or agave syrup for the honey.
Substitute BREAKSTONE'S or KNUDSEN Sour Cream for the cottage cheese.
If your blender needs a nudge to get things started, add 1 Tbsp. milk to ingredients in blender before blending as directed.
Use Your Electric Griddle
If using an electric griddle to cook these pancakes, heat the griddle to 325°F before adding the batter to the hot griddle to cook the pancakes.
